Organic Tempranillo grapes from sandy, calcareous vineyards in southern Spain are fermented in stainless steel before being dealcoholized through vacuum distillation. Aromas are recovered and, after a short maceration, the wine is lightly carbonated and bottled. Noughty recommends pairing with salt, spice, and Asian cuisine.
